Cocktail Recipe: Blue Bonnet Easter Cocktail at Hill Country Barbecue
The richly smoked fare at Penn Quarter roadhouse Hill Country Barbecue is well-suited to warm weather, the year-round situation in Texas — the state from which the comfort food menu takes inspiration, and to celebrate the season and the upcoming holiday, beverage director Alex Muñoz has come up with a drink to match. Her Blue Bonnet Easter Cocktail is our Drink of the Week.
“The bluebonnet is the state flower of Texas and is such a beautiful shade of blue-purple that it just screams ‘Spring!!’” says Muñoz, adding, “The fresh fruit with gin is tart, light, and refreshing — not to mention beautiful to look at!”

Blue Bonnet Easter Cocktail
2 oz. Bombay Sapphire gin
¼ oz. agave nectar
½ oz. fresh lemon juice
6-8 fresh blueberries
Muddle blueberries with agave nectar and lemon juice in mixing glass. Add gin and ice and shake vigorously. Serve in old fashioned glass and top with a splash of soda.
