Policy Introduces Craft Cocktails on Draft
 
	
          Everyone  loves a craft cocktail. But if you’ve spent any time on the other side  of the bar, you know quality cocktails can take a lot of time and  effort. Hence, the growing popularity of cocktails on tap, catering to  D.C. drinkers’ demand for quick quality at a reasonable price. On U  Street, Policy general manager Jordan Davidowitz has introduced craft on  draft cocktails to provide just that, without losing the technique of  skilled mixologists.
 The  current offerings include just one craft cocktail on tap, the  vodka-based Strawberry Rhubarb Collins, but coming soon are eight  dedicated draft lines — four on each floor — and bartenders are actively  experimenting with new creations.

We  had the chance to catch up with Jordan and chat about the inaugural tap drink.  “Strawberry and rhubarb are in season, and are a classic combination,”  he noted. How  do they make sure the cocktail on tap tastes fresh? “We add clarified  lemon juice to the mix and carbonate the whole product in the sixtel.  That way, we can pour a consistent drink every time. The cocktail is  finished by rimming the glass with a basil sugar and garnishing with a  fresh strawberry.”
“Once  we have the lines installed, we’ll change the vodka offering  seasonally, and we’re working on three more, including a whiskey with  fresh ginger beer and a gin with our homemade tonic,” Davidowtiz said  with excited anticipation. Sounds good to us; we can’t wait to try them all.
