Barrels Bring Better Booze to BLT Steak
Now that the inauguration is behind us, you’ll have an easy time making your way to BLT Steak for a drink or two. When you go, you might notice something new, and we’re not just talking about Elisir alum Steve Oshana. He and partner-in-drinks Rico Wisner recently set up three charred wood bourbon barrels behind the bar, and they’re using the casks to create house-aged cocktails.
Barrel-aged cocktails are trendy, sure, but there’s a reason behind the hype: by allowing the ingredients of a drink to spend time mixing and soaking up flavor, they meld into something more than the sum of the parts. Smooth and smoky, aged sips are perfect for banishing the chill brought on by frigid weather.
The first trio of these drinks is available at the bar now for $14 each, and includes The Brooklyn. This one was the inspiration for the whole barrel-aged deal, apparently, and Oshana calls it “the perfect cocktail.” In it you’ll find rye, dry vermouth, maraschino liqueur and housemade Amer Picon, aged to a sweet finish.
Also on the list is an aged Negroni (Cap Rock gin, Aperol, sweet vermouth) and the Bermuda Triangle. That last is a twist on the Dark ‘n’ Stormy, using Gosling’s Black Seal rum aged for two weeks then infused with star anise for another five days. That concoction gets mixed with house ginger beer made with Champagne yeast. Bring your best tasting palate, these drinks are ready for you.
